EXECUTIVE CHEF ASSISTANT / FAMILY ARENAJOB OVERVIEW: Responsible for assisting in the supervision of Food and Beverage Operations and the performance of the kitchen staff. Duties will be assigned by Food and Beverage Manager to assist in the kitchen/suites/catering areas under Executive Chef and in concessions/warehouse under Concessions Manager.
RESPONSIBILITIES:
Operate kitchen food services including but not limited to all suite foods, inside and outside catering, and event food and beverage comprising of artist catering, dressing room catering, and bus catering.Supervise and manage kitchen staff, including hiring, training, and scheduling of employees.Ensure all kitchen staff are properly trained in kitchen operations and food preparation and are following all food safety and sanitation guidelines.Maintain high standards of cleanliness and sanitation in all food and beverage storage, service and prep areas. Maintain a clean and organized kitchen environment.Monitor proper inventory levels while ordering and receiving products and utilizing a standard rotation of food to ensure freshness and quality.Act as sous-chef during large events and learn all processes including the preparation and presentation of catering meals from Executive Chef.Assist in preparation of food items necessary for all events including those needed in catering and in concessions.Ensure that all recipes and menu item specifications are followed correctlyAssist in concession stands with closing data, check inventory report and cash balancing.Assist in event trouble shooting and maintaining POS system for concessions. Update the terminals for each event.Monitor concession stand operations during events and assist when needed.Stock concession stands prior to events.Assist in maintaining and promoting the Arena Club.Assist Food and Beverage Manager with financials involved with food and beverage operations.Control costs by preventing product and cash loss. Limit waste and spoilage.Operate a three-sink and dish machine wash system.Provide regular maintenance and cleaning to food and beverage equipment.Act as a leader in the kitchen.Work fast paced.Maintain a clean and safe work area at all times.Take initiative to complete task without direct supervision.Maintain a clean appearance and professional demeanor at all timesBe a Team Player.
