Knowledge and experience:
3 years of experience in traditional dough mixing techniquesFamiliarity with traditionalEuropeanbread formulasProfound knowledge in organizing baking shiftsefficientlyDeep understanding of the typical characteristics ofGermanandEuropeanbreads and pastries (such as Stollen, Brezel, rye breads and others)Good knowledge in both rye and wheat baking technologyGood developedsensorialskills forhand feeland smell ofdoughs2 years of experience in working with sourdoughs and other prefermentsAbility to recognize and remedy breaddefectsKnowledge of traditional raw materials and their baking functionality
