  Job Description

  The Director, Food and Beverage is required to have a proven background in Food and Beverage and is responsible for the overall operation and success of all outlets including fl.2, In Room Dining, Starbucks, Culinary, Banquets and Stewarding.  The overall objective and purpose of this role is to coordinate, supervise, and direct all property food and beverage operations while maintaining a profitable F&B department and high quality products and service levels. The F&B Director is expected to market creative ideas to promote business; reduce turnover; maintain revenue and payroll budgets and meet budgeted productivity while keeping quality consistent. This is a hands on operational role with an expectation of being on the floor and in the operation with the leaders, colleagues and guests.

  What You Will Be Doing:

  Reporting to the Director of Operations, responsibilities and essential job functions include but are not limited to the following:

   

  Lead and coach the respective Outlet teams in providing exceptional guest service, employee satisfaction and profitability

  Implements food and beverage financial strategies by anticipating requirements, trends and variances; develops budgets and capital expenditure plans; develops action plans, measures and analyzes results, initiates corrective actions, minimizing the impact of variances

  Constantly seeks out creative ways to improve service and overall F&B revenues and profitability

  Analyze the food and beverage operation, make and implement recommendations regarding new proposals to increase sales, cost controls, and increase productivity and guest satisfaction

  Approves menus by consulting with chefs and F&B leaders; reviews potential F&B menus; evaluates popularity of past menu options and availability of seasonal food ingredients and wines; anticipates food and beverage consumption and estimates cost of ingredients; minimizes waste; approves orders with suppliers; monitors the evaluation of the quality of product

  Actively develop and participate in the merchandising and marketing of all food and beverage personnel including staff planning, hiring, scheduling, training and personal development

  Maintains safe, secure, legal and healthy work environment by establishing, following, and enforcing sanitation and quality of food and beverage preparation and service standards and procedures; monitors conformance to regulations of the alcoholic beverage commission; enforcing sanitation and legal regulations of all kitchens, bars and service areas

  Ensure the ongoing professional development, growth, and satisfaction of all team members

  Ensure the implementation and compliance of standards as outlined in the Fairmont Food and Beverage Core Standards

  Oversee the training and development of all leaders and colleagues ensuring that they are informed regarding responsible service of alcohol and adherence to hotel and Company policies

  Actively participates and ensures strong departmental representation on other hotel committees and activities

  Performs/oversees various administrative functions such as: preparing weekly schedules based on productivity standards, completing purchase orders, POS/Avero usage, reporting & maintenance, monthly forecasting and month-end commentary.

  Attend monthly departmental meetings to promote effective communication and to discuss goals, development, action plans for hotel and departmental initiatives as well as budget and monthly financial forecasting and reviews

  Schedule and execute weekly/monthly F&B Leadership meetings

  Create, maintain and encourage excellent public and employee relations

  Other duties as assigned

   

  Qualifications

  Minimum 5-7 years progressive Food and Beverage Management Hotel experience, preferably in a luxury property

  Degree or Diploma in Hotel Administration from a recognized University/College is an asset

  Robust financial, cost control knowledge and applications mandatory

  Strong Culinary knowledge an asset

  Must be a creative leader, possessing a high degree of professionalism, human resources, communication, interpersonal and administrative skills, ambition, drive and energy

  Excellent interpersonal & communication skills both written and verbal, Analytical and detail-oriented

  Must hold sound computer knowledge, particularly POS (Silverware) and Microsoft Office

  Hands on management style with ability to lead through example

  Strong organizational skills

  Ability to work well under pressure in a fast paced environment
