Title: Development Brewer
Job Description: The Development Brewer at Molson Coors Beverage Company USA LLC in Milwaukee, WI (multiple positions open) will develop and grow institutional knowledge of ingredient development to support future launches of beer, cider and beverages beyond beer. Provide technical brewing expertise in the facilitation and coordination of plant problem resolution and production activities. Provide input and evaluation of plant brewing operational procedures. Audit brewery systems, including recipe development, quality manual development, brewery trials process, recipe and material modifications, and packaging claims. Evaluate Corporate Engineering recommendations to assure compatibility with current and future brewing requirements. Work closely with Marketing to develop brewery product briefs, providing input on the technical characteristics of the product and integrating Corporate Engineering guidance into new brewery product briefs and recipe development activity. Support consumer testing, product validation, and consumer monitoring activity for new products. Ensure brewery capability is in place to execute new product development launches within the existing network. Lead and serve as an important participant in start-up of new/modified brewing equipment at the breweries. Support product development aspects of brewery capital expenditure projects including standard operating procedures and process development, recipe development and integration, early stage performance monitoring during new product introductions, and risk assessments for new product introductions. Work closely with procurement to select and validate new brewery ingredients and suppliers to the network, focusing on technical quality and cost reduction for new product developments. Telecommuting permitted two days per week. Requires quarterly travel to international Molson Coors production locations.
Minimum Requirements: Requires a Bachelor's degree in Biochemistry, Brewing Science, or a related field, plus 3 years of professional experience with beverage product innovations from concept through to implementation. Must include 3 years of experience with each of the following: (1) consumer and technical sensory assessment of alcoholic beverages, including development, dosing, quality assurance, and production of new beverage types; (2) ingredient development for non-alcoholic beers, calorie reduction, gluten-free products, and sensory matching; (3) aligning product concepts with brand requirements and consumer expectations; (4) beverage recipe reformulation to ensure compliance with new legislation; (5) aging process development for spirit beverages; (6) validation and testing of beverage products’ shelf stability; (7) production scheduling, process design and optimization, and auditing of beverage production facilities; and (8) selection and assessment of new ingredients and suppliers within the context of new product development applications.
