We are proud to be a military and veteran friendly employer.About This Position Accurately and efficiently prepares a variety offood items in accordance with assigned work instructions and menus.Essential Functions, Duties, and Responsibilities Function as a Lead fortheir respective shift, being responsible for an efficient, well-runningshift, while ensuring other positions (Cook I / FSW) are completingrequired tasks Prepares a variety of meats, seafood, poultry, vegetablesand other food items for cooking in broilers, ovens, grills, fryers anda variety of other kitchen equipment Refer to Daily Prep List at thestart of each shift for assigned duties and completes opening andclosing checklists daily. Promptly reports equipment and food quality orshortage problems to Assistant Food Service Director/Food ServiceManager. Knows and complies consistently with standard portion sizes,cooking methods, quality standards and kitchen rules, recipes, policiesand procedures. Follows assigned instruction to properly stock andmaintain sufficient levels of food products at line stations to assuresmooth serving of food. Portions food products prior to cookingaccording to standard portion sizes and recipe specifications.Responsible for completing required production paperwork, while alsoassigning and supervising inmates in (as provided) in the completion oftheir required tasks. These could include food prep, serving, clean-up,pots, dishes, sanitation etc. (when applicable) Responsible for allaspects of receiving, storing, issuing and controlling inventory. (whenapplicable) Maintains a clean and sanitary work station area. Followingassigned recipes, prepares food items for broiling, grilling, frying,sauteing or other cooking methods by portioning, battering, breading,seasoning and/or marinating according to directions. Follows properplate presentation and garnish set up for all dishes. Handles, stores,labels, and rotates all products properly and in accordance toapplicable state laws. May perform other duties as assigned.
