Position Summary:
The role of Executive Chef at Capital City Club Downtown is pivotal in upholding and elevating our culinary standards. As a hands-on position, it demands proactive leadership, with direct oversight of a team of 5-6 individuals. Key responsibilities include kitchen management, innovative menu development for club events, and ensuring unwavering high standards in food quality, presentation, hygiene, and overall culinary excellence.
Primary Responsibilities:
Lead, mentor, and inspire the kitchen team, cultivating a culture of excellence and continuous improvement.
Manage staffing levels, encompassing recruitment, training, scheduling, and performance evaluations.
Collaborate with the Catering Manager and Clubhouse Manager to create comprehensive menus for all banquet and club events.
Work closely with the purchasing department to ensure quality and quantity purchasing aligns with upcoming menus.
Skillfully manage the kitchen budget, overseeing food and labor costs.
Implement effective inventory controls, conducting regular audits to minimize waste and enhance efficiency.
Develop standardized recipes and techniques for food preparation, ensuring portion control and appropriate menu pricing.
Attend food and beverage and management meetings.
Prepare relevant data for budget sections, covering food and labor costs, as well as capital expenditures.
Plan and oversee the employee meal program.
Establish and maintain a regular cleaning and maintenance schedule for all kitchen areas and equipment.
Provide opportunities for professional development for kitchen staff.
Ensure strict compliance with all local, state, and federal regulations related to food preparation and service.
Minimum Qualifications:
A culinary degree or equivalent professional culinary certification is preferred.
C.E.C. or Master Chef certification (or aspirations to achieve).
Minimum of 5 years of experience in a culinary supervisory or leadership role, preferably in a private club or upscale dining establishment.
Demonstrated leadership experience with strong team management skills.
Proficiency in budget management and cost control.
Excellent communication and interpersonal skills.
Knowledge of current culinary trends and a passion for culinary excellence.
Proficiency in Windows-based software applications.
Current ServSafe Certification.
