Summary: This position operates sous vide cooker and hoist to safely ensureproperly cooked products. Utilizes touchscreen/HMI controls and monitormachine activity (flow, machine status, temperature settings, levelindication). Inspect raw and finished product as they move through the sousvide process for quality. Perform safety inspection of equipment. Operate anoverhead hoist to load and unload racks of protein products into and out ofcookers. Operate hoist to lift, lower, and pull loads vertically andhorizontally in a safe manner using a remote control. Ensures that safetyequipment is properly used.
Essential Duties and ResponsibilitiesTend, operate, and control equipment sous vide cookers to cookingredients or prepare products for further processing. Record production andtest data, such as processing steps, temperature, and readings,cooking time, batches processed, and any test results. Set temperature,water levels, and time controls, in accordance with Standard OperatingProcedurDirect the removal of cooked material or products from equipment. Usinggood spatial ability, operate a traveling overhead hoist to lift, move,and position racks of raw and finished proteins into or from sous videcookers. Observes load hookup and determines the safety of the load.Manipulates or depresses hoist controls (e.g. levers and buttons) toregulate speed and direction of hoist movement. Operate the hoist to processracks into various sous vide cookers tanks, making sure that all safetyrequirements are followed. Observe load hookup and determine safety of load.Clean, wash, and sterilize equipment and cooking area, using waterhoses, cleaning or sterilizing solutions, or rinses. Review the completionof all pre-op functions and verify all equipment is ready for production.Assemble, connect, and verify all equipment as appropriate. Enter allrecipe functions into the HMI terminal prior to each product running. Installand verify calibration of time/temp. Observe dials and gauges while themachinery is in use to ensure everything is set at the correct temperature andadjust as necessary. Be cognizant of any changes in a machine's capabilitiesand report any malfunctions to management.Supports the Supervisor in the day-to-day sous vide operations of thebusiness by achieving set production and/or operational goals. Coachescoworkers in an appropriate manner regarding all aspects of sous vide cookingactivities as necessary. Supports an environment where employees maximizetheir performance.Monitors assigned work areas for loss prevention, risk management, andUSDA compliance promptly escalating issues or concerns. Promotes departmentand company goodwill. As an active participant, champions training &development and retention of qualified talent.Performs routine walking and visual inspections of their area/s toobserve unsafe acts or conditions; takes immediate corrective action wherenecessary to develop and meet plant safety goals. Is actively involved insafety efforts. Coaches employees to ensure adherence to safe operatingprocedures. Exhibit a functional "authorized employee" understanding ofsafety rules and L.O.T.O. Consistently use personal protective equipment asrequired and as prescribed by the company.Maintains adequate knowledge of products and equipment to coach employees inproperly performing their job and meet established HACCP and USDArequirements; taking corrective or training actions as necessary.
Education/Experience:High School or GED required; some college preferred or the equivalentcombination of education and relevant experience.Three years progressive experience in commercial food operations,preferably in a protein-related industry.Functional knowledge of MS Office Suite and knowledge of industry productreporting systems.Ability to read and interpret documents such as letters, memoranda, invoices, policies, and other documentation.Ability to apply common sense understanding to carry out detailed butuninvolved written or oral instructions, and to deal with problems involvinga few concrete variables in standardized situations. Sufficient mathematicalskills to add, subtract, multiply, and divide in all units of measure,using whole numbers, common fractions, and decimals accurately. Ability tocompute rate, ratio, and percentage correctly.

This position also participates in vacationand sick leave pay programs. The pay range for this position is $18.50 to$19.67 per hour, based on experience and qualifications.
