The Opportunity We are seeking an experienced Sous Chef to joinour team! The sous chef will lead the kitchen team in the head chef\'sabsence. A qualified candidate will work under the direction of the headChef and GM for all Kitchen Operations, including food purchasing,preparation, and maintenance of quality standards; sanitation andcleanliness; training of team members in methods of cooking,preparation, plate presentation, portion and cost control. What You\'llDo Maintain Standards Provide guidance to junior kitchen staff members,including, but not limited, to line cooking, food preparation, and dishplating. Make employment and termination decisions includinginterviewing, hiring, evaluating, and disciplining kitchen personnel asappropriate. Ensure that all equipment is kept clean and kept inexcellent working condition through personal inspection and by followingpreventative maintenance programs or arranging for the same. Ensure thatall products are ordered according to predetermined productspecifications and received in correct unit count and condition anddeliveries are performed in accordance with the restaurant\'s receivingpolicies and procedures. Schedule labor as required by anticipatedbusiness activity while ensuring that all positions are staffed when andas needed and labor cost objectives are met. Be knowledgeable ofrestaurant policies regarding personnel and administer prompt, fair andconsistent corrective action for any and all violations of companypolicies, rules and procedures. Responsible for training kitchenpersonnel in cleanliness and sanitation practices.
