Prepare traditional Neapolitan pizza toppings such as broccoli rabe, sauted eggplant, sauted clams and mussels, Genovese sauce, Bolognese sauce, and meatballs. Be responsible for the day-to-day running of the pizzeria and the training of current and new employees. Monitor inventory, manage and estimate amounts and costs of food supplies, and place orders for more supplies as needed, ensuring genuine Neapolitan ingredients are utilized. Direct and supervise the cleaning of the kitchen to maintain sanitation standards. Prepare specialty pizzas including fried and baked calzone, Neapolitan pizza fritta, panuozzo, montanara and arancini. Supervise 2 pizzeria assistants.
