Job Summary
The Executive Chef is responsible for kitchen functions ranging from menu development working with the Senior Executive Chef, menu education and execution assurance, employee supervision & development, product quality assurance, product inventory, cleanliness and maintenance in all kitchen areas. He/she will assist with the system organization of kitchen efficiencies, prevention of product waste and proper product utilization while managing labor expenses. The Executive Chef will also be involved in special events and VIP functions with the Senior Executive Chef. He or She must report all activity to the Senior Executive Chef occurring in his or her absence.
RESPONSIBILITIES AND AUTHORITIES:
Ensures all equipment in the kitchens is properly maintained and in working order in accordance
with County Health Department, venue standards and corporate third party inspections.
Coordinates with support departments for acquisition of needed goods and services.
Ensures sufficient staffing levels are scheduled to accommodate business demands.
Ensures all products are prepared in a consistent manner and meet departmental appearance/quality
standards.
Provides management and support to the kitchen management staff, ensuring efficiency in the
daily operation.
Remains at all times appropriately groomed and wears the uniform provided.
Follows and enforces all applicable safety procedures specified for kitchen and food services areas.
Ensure that inventories are executed accurately by the purchaser; double check the counts and review
inventory dollar limits.
Work with the chefs and cooks thru education to elevate their skills and build them for
greater responsibilities.
Work with the Senior Executive Chef to develop menu that maximize product utilization while
elevating our level of service and menus.
Work with the warehouse manager create event pick up schedule.
Work with Production Sous Chef and Event Sous Chef to ensure that all events are packed and executed
Correctly at all times.
PRIMARY DUTIES:
Manage the Commissary Kitchen with the assistance of his or her team.
Ensure the event team is prepared for flawless execution.
Control expenditures to increase profitability.
Work with the Admin / Purchaser to ensure proper product purchasing.
Trouble shoot unexpected or unusual situations in the kitchens.
Oversight of HACCP program organization and execution per the standard.
Assist Senior Executive Chef with interviews of applicants for kitchen employee positions.
Attend and participate in various meetings and administrative functions.
Train and update kitchen employees with regard to all applicable policies and procedures.
Design and conduct ongoing ‘on the job’ training for kitchen staff.
Manage wedding tastings and Grand Tastings with the assistance of his or her Sous Chefs
