Position Summary
City Winery strives to deliver the highest-endcombined culinary and cultural experience to our customers who are passionatein sharing wine, music, and culinary arts. We are a unique facility, combininga fully functioning winery with intimate concerts, food & wine classes,private events in a variety of configurations, and fine dining. The Executive Chef isresponsible for the overall management and oversight of culinary strategies,initiatives, and daily operation to ultimately ensurethe highest standards are met for all food prepared in the kitchen and servedat our property. This role is accountable for adhering to City Winery’sfood culture and style, standards and expectations of food quality, freshness,and presentation, and maintaining compliance all associated regulatoryguidelines. This individual will be creative thought leader with a passion forthe culinary world and the ability to successfully execute culinary strategies.This role must lead by example in successfully creating and fostering anenvironment of mutual trust and respect.
This role leads the kitchenin all areas including but not limited to providing direction to the day-to-daykitchen coordination and operation, culinary creation and development,budgeting and financials, associate management and supervision, purchasing andinventory, and successfully partnering with all internal divisions to achieveCompany goals.
The Executive Chef isresponsible for creating a unified vision and leading development and trainingof the culinary architecture to ensure all culinary functions align and supportthe company’s vision, quality, and direction. This individual must create andnurture business relationships, lead and train in a hands-on fashion, exemplifyleadership in internal and external guest hospitality, and create a positiveatmosphere for all internal and external relations.
MinimumQualifications
Minimum7 years’ experience in an overall kitchen leadership or similar role
AOSCulinary School Graduate and/or related training is a plus
Functionalworking knowledge of all Health Department, OSHA, and all other relatedregulations
Demonstratedknowledge of current culinary/ industry trends
Abilityto successfully multi-task, delegate, and manage several projects/tasks at oncein a high pressure, fast paced environment
Musthave demonstrated decision making and trouble-shooting skills with superiorlevel of attention to detail
Financial/businessacumen and excellent analytical skills. Ability to meet budgets includinglabor, food, and applicable direct operating costs
Abilityto effectively train, develop staff and build team morale
Abilityto work collaboratively and professionally across company levels in achievingoverall company and business goals
Excellent interpersonal skills includingverbal and written communication skills, and the ability to lead and work as ateam. Strong presentation skills both written and oral

Overview of Responsibilities
Oversee all areasof culinary operations. Works hands-on to schedule, coordinate, andsupervise all activities of multiple shifts. Manage all kitchen staff,delegate responsibilities, set deadlines, and maintain accountability
Teach and adhereto City Winery philosophy, culture, and commitment to quality food andservice
Continuallymonitor production procedures to ensure quality, consistency, efficiency,productivity, and professionalism are at highest level
Supervise kitchenmanagement to ensure all daily and weekly standard operating proceduresare followed, including but not limited to following recipes/methods,quality measures and specs, product utilization, deadlines,daily/weekly/holiday planning, purchasing communication and inventoryplanning
Leadby example and enforce all Company policies, procedures, guidelines, andpractices
Directand oversee proper training of kitchen staff in the proper storage,preparation, cooking, garnishing, and presentation of food.
Establish goals, anticipate and resolveproblems concerning all facets of the kitchen
Execute, followup, and ensure sustained future for all culinary related projects, tasks,initiatives
Develop productionmethodologies to increase efficiency, productivity, quality and/orconsistency in the kitchen
Ensurethat high standards of sanitation, cleanliness and safety are maintainedthroughout all kitchen areas at all times, in compliance with establishedstandards. Inspect supplies, equipment, or work areas to ensure allkitchen equipment is cleaned and operating safely and properly i.e.refrigerators, ovens, freezers, stoves, etc.
Report to work atscheduled time, neatly groomed and in the correct uniform
Attend and participate in all scheduledmeetings and training
Partner with and work collaboratively withinternal Company divisions to achieve overall company and business goals
Perform and complete all projects/tasks/objectives as requested by upper management and Company leadership
Additional Requirements
Abilityto commute and travel to all locations to participate in meetings, training,and any corporate/sponsor events as necessary
Abilityto perform physical requirements of position including standing and walking aroundfor extended periods of time, bending, pushing, pulling, lifting, and carryingloads of up to 50 pounds
Ableand willing to work a flexible schedule including nights, weekends, andholidays
