industrial dough mixer and machine operatorSets up and operates dough machineAccurately weigh ingredients according to formulaMixes dough or filling to dough and bakery recipeSafely adjust controls of the equipment, following food safety and safety protocolsRecords all necessary parameters of the day’s operation like lot numbers of ingredients, temperature and all other information required• Records output and wastages incurred in the production• Divide and shape dough either by hand or thru the use of designated equipment• Continuously inspect bread dough quality and make sure that all bread dough is packed within company’s standard. Reports product deviation to supervisor for corrective action• Adjust machine settings to ensure that the bread dough quality will be within specifications• Communicate with leads or supervisors any deviation noted on ingredients, equipment, final mix.• Completes duties in accordance with GMP (Good Manufacturing Practices), quality assurance policies, safety and other company programs and procedures, and in accordance with government codes and regulations.• Maintain a clean and safe work environment, including wiping and washing equipment, tools, containers and the like, sweeping and mopping of floors and trash removal

Additional Skills & Qualifications:
Must have knowledge of dough mixing methods and baking ingredients• Knowledge of starters, levain and naturally leavened breads is a plus• Must have the knowledge to use and operate weighing scale, mixers and depositors needed for the process• Must be able to work in an environment where there are flour and other ingredients commonly used in baking• Must be able to lift, push, and pull up to 40 pounds• Basic math and reading skills are required for this position• Ability to write legibly• Ability to comprehend basic verbal and written instructions in English; ability to read product labels and recipe• Willing to work in hot or cold environment• Flexibility and adaptability• Must have a valid CA Food Handler’s Card or ServSafe certified
