RESPONSIBILITIES EssentialDuties and Responsibilities The following duties are normal for thisposition. These are not to be construed as exclusive or all-inclusive.Other duties may be required and assigned. 1. Completes assignedcleaning duties following proper sanitation techniques. Cleans andsanitizes work tables, equipment, dish machine, sinks, floors, coolersand other dietary equipment. Empties garbage, cleans garbage cans, andtakes dirty laundry as assigned. 2. Operates the dish machine to insurethorough cleaning of dishware and utensils. Puts away clean dishes asassigned. Records dish machine temperatures each meal. 3. Follows propergloving procedures while in the kitchen and while handling foods, mixingsalads, etc. 4. Makes sure foods are thawed in the coolers and kept atproper temperature. 5. Dates, labels and covers all leftovers and placein cooler or freezer. 6. Assist cooks in preparing simpler foods forcooking or service, such as vegetables, fruits, sandwiches, & meats. 7.Cleans vending machine and refills stock items in vending room asassigned. 8. Responsible for following the diet sheets and menus whenportioning foods and serving on the tray line. Use proper equipment whendishing up foods. 9. Set up supplements and extra items for theresidents and patients on their trays each meal. 10. Preparebetween-meal snacks. 11. Uses proper equipment when cleaning, dicing,cutting fruits and vegetables as needed. 12. Sets up and fills therequisition order for supplies from the nursing units. 13. Heats specialitems in a microwave oven. 14. Assists the cook in accurately setting upthe cold serving line with trays and beverages and to ensure all coldfood temperatures are within guidelines utilizing a thermometer. Makessure all mealtime deadlines are met. 15. Offers menu ideas andsuggestions for monthly menus. 16. Train new staff. 17. Stocksingredients and monitors inventory levels. Congregate Meal Programduties (when assigned) 1. Accurately counts out the food items for thehot and cold portions of the congregate meals to be delivered. 2.Assists the Congregate Meal Cooks in assembling meals for delivery in atimely manner. 3. Follows proper gloving procedures while in the kitchenand while handling foods & slicing meats, etc. 4. Delivers the meals todining sites from time to time within time constraints.
