  Overview

  Cook 1 (Tournant Cook) Prep, prepare and execute consistent quality food while assisting in the overall function of Kitchen.

  Responsibilities

  Prep and prepare all food for overall restaurant menus, EDR and banquet functions while following recipe cards, production guides and portion standards. Follow and cook in timely manner all tickets rung in by service staff.

  Date and label all food containers and production items. Follow all food rotation standards to HEI Hotel and resort standards As well as FIFO first in first out.

  Monitor and record daily all cooler temperatures bringing any issues with temperature range to Executive Chef or The Sous chef Managing your Kitchen

  Prep for set par according to business volumes, pull necessary items and inform chefs of Food inventory needs to complete daily tasks.

  Assist in Prepping and keeping Buffet stocked when open.

  Monitor all items for quality ensuring only the best is served to the customer

  Assist chefs in control of food cost by limiting waste, cross utilizing products and using creative means to repurpose food for Employee dining facility

  Have a clear understanding of how to operate, maintain and clean properly Deep fryers, Steakhouse broiler, open gas range, flat top/ griddle, convection oven, combi oven, food processor, mixer, slicer, steam tables, tilt skillet and all other necessary Kitchen equipment in daily job duties.

  Ability to work clean. Follow all federal and state food health and safety guidelines at ALL times.

  Perform cleaning and deep cleaning during low demand times to maintain the highest level of cleanliness standards

  Follow all opening and closing procedures dependent on your scheduled shift

  Adhere to all policies and procedures.

  Help with stewarding to maintain kitchen plates, smallware's and all utensils are stored properly

  Perform any and all Job duties assigned to you from Executive Chef and sous chefs

  Ability to lift up to 50lbs in daily job duties

  Qualifications

  Finger and hand dexterity to operate food machinery with or without reasonable accommodation

  Minimum entry level understanding of knife skills i.e., Dice, julienne, brunoises, chiffonade, mince

  Effective verbal and written communication skills. Ability to adapt communication styles to effectively respond to guests, coworkers and management.

  1 year Professional kitchen experience required.
